crispy chicken salad with avocado lime dressing
You’ll Need
Chicken Strips (or Plant-Based Chicken Strips!)
Kale
Green and/or Red Cabbage
1-2 Carrots
Cucumber
½ of an Avocado
¼ Cup Mayo
Lime Juice
Garlic Powder
Onion Powder
Steps
1. Bake 3-4 chicken strips as directed by the packaging
2. Chop kale and cabbage and add it to a large bowl
3. After Carrots are peeled, use your peeler to add strips of carrots and cucumber into the large bowl
4. In a separate bowl prepare the dressing. Add half of a ripe avocado, ¼ cup of mayo and lime juice, onion powder and garlic powder (measure with your heart!). Whisk together until smooth
5. Remove chicken from the oven and let cool. Then cut into smaller pieces.
6. Add chicken and salad to the bowl. Mix and serve!
